Using an electric whisk, cream the butter and caster sugar in a mixing bowl until light and fluffy. Whisk in the orange zest, crushed cardamom seeds and salt.
Stir in the Mevalia Bread Mix and orange juice with a wooden spoon.
Bring the dough together with your hands and place on a large sheet of parchment paper, roll out to about 1.5cm thickness. Cover and chill in the fridge for 20 minutes.
Preheat the oven to 180°c/160°c fan/ gas mark 4.
Remove the dough from the fridge and roll out to a thickness of 0.5cm.
Cut out the biscuits with a 6cm cutter and carefully transfer to a lined baking tray. Sprinkle each biscuit with a little caster sugar and bake for 17-18 minutes until lightly golden.
Meanwhile, melt the Vitabite in the microwave for 1-2 minutes and transfer to a mini piping bag.
Once the biscuits are cooked, transfer to a wire rack and drizzle with the melted Vitabite. Allow to cool completely and store in an airtight container.
