Preheat oven to 190°C/170°C fan/Gas mark 5.
Rub the Fate low protein all-purpose mix and the margarine together in a mixing bowl until it resembles coarse breadcrumbs.
Mix the sugar into the water until dissolved and combine with the Fate mixture.
Leave to rest for 10 minutes.
Dust a clean work surface with Fate low protein all-purpose mix and knead the pastry for a minute on the work surface until smooth.
Using a rolling pin, roll the pastry out between two pieces of grease proof paper, to form a 28cm square and cut into 12 x 6cm squares.
In a separate bowl, mix the prunes, dried fruits, sugar and cinnamon.
Place 1 tsp of the filling into the centre of the squares.
Cut a line from each corner to the edge of the filling. Do not cut through the entire square.
The lines should leave you with a square made up of 4 triangles. Lift the bottom right hand corner of each triangle and press on top of the mixture to form a pinwheel shape.
Brush with ProZero and place on a lined baking tray.
Bake for 15 minutes or until golden.
