Blueberry & Mango Muffins

  • RECIPE MAKES: 12 muffins
  • PREP TIME: 10 minutes
  • COOK TIME: 30 minutes
Step 1

Preheat the oven to 200c/180c fan/gas mark 6.

Step 2

Place the Mevalia bread mix into a mixing bowl then mix the light brown soft sugar, baking powder, baking soda, sugar and syrup with the baking powder.

Step 3

Add the soft margarine and the orange juice, and using a wire whisk mix quickly for 1 minute until smooth and well mixed.

Step 4

Stir in the blueberries & mango, coating with a little Mevalia bread mix first (this will stop them from sinking when baking)

Step 5

Divide the mixture between 12 muffin paper cases set inside a muffin tin.

Step 6

Bake in a preheated oven 200c for 25-30 minutes until risen and golden brown.  

Step 7

Place on a rack to cool.

Step 8

The muffins are perfect for freezing.

  • 325g Mevalia bread mix
  • 100g soft light brown sugar
  • 50g golden syrup
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 100g soft margarine
  • 20ml veg oil
  • 340ml pure orange juice
  • 90g blueberries
  • 90g diced fresh mango
