Aubergine Milanese

  • RECIPE MAKES: 2 portions
  • PREP TIME: 20 minutes
  • COOK TIME: 45 minutes

Heat oil in a pan over a medium heat and onion, garlic, cherry tomatoes, basil, and oregano.

Fry for 5 minutes or until soft.

Add the passata and simmer for 15 minutes or until the vegetables are soft.

Heat your deep fat fryer to 180°C according to manufacturer’s instructions.

Pour the Fate Low Protein All-Purpose Mix, ProZero and breadcrumbs into separate bowls and dip each slice of aubergine in the Fate, then the ProZero and finally cover in breadcrumbs.

Using a slotted spoon, place the aubergine in the deep fat fryer and fry for 5-10 minutes until golden brown.

Remove from the fryer using the slotted spoon and transfer to a paper towel, allow to cool slightly.

In an oven proof dish, add the tomato sauce to the bottom and place the fried aubergine on top.

Top with 40g Violife Original and grill for 10 minutes or until the Violife has melted.

Season with salt and pepper to taste.

Serve with permitted vegetables.

  • 1 Onion, finely chopped

  • 100ml Passata
  • 80g Fate Low Protein All-Purpose Mix
  • 20ml ProZero
  • 50g Mevalia Bread, blitzed into breadcrumbs
  • 1 Aubergine, sliced into rounds
  • 40g Violife Original, grated
  • Salt and pepper to taste
  • You will need a deep fat fryer
