Add oil in saucepan and heat over a medium heat.
Add onions, butternut squash, red peppers, mushrooms, garlic and cook for 5 minutes.
Add tomato purée, paprika and cook for a further 2 minutes.
Add chopped tomatoes and water and bring to the boil. Simmer for 10 minutes.
When cooked mash with a fork until almost smooth.
