Place the Mevalia Rice into a pan with 2 litres of water along with the zest and juice of a lime and boil for 9-11 minutes.
Heat the oil in a pan, add the vegetables and chilli, stir fry for a couple of minutes.
Add the jackfruit and cook for 8-10 minutes, stirring regularly. Adding a splash of water if it starts to stick.
Drain the rice and serve with the curry. Garnish with the coriander leaves.
