Stuffed Courgette Boats

  • RECIPE MAKES: 1 Boat
  • PREP TIME: 10 minutes
  • COOK TIME: 15 minutes
Step 1

Preheat the oven to 200°C/fan 180°C/gas mark 6.

Step 2

Using a spoon, scoop out the seeds of the courgette halves and discard.

Step 3

Fill the courgette skins with the Violife and top with the cherry tomatoes and mushrooms.

Step 4

Place on a lined baking tray and bake in the oven for 20 minutes or until soft.

Step 5

Sprinkle over the basil and serve.

  • 1 Courgette, halved lengthways 
  • 4 Cherry tomatoes, halved 
  • 4 Mushrooms, sliced 
  • 50g Violife Original flavour, grated 
  • 5 Basil leaves, finely chopped
