                  Stuffed Courgette Boats

- COOK TIME: 15 minutes
              Method
            
            
          Step 1
                  
        Preheat the oven to 200°C/fan 180°C/gas mark 6.
          Step 2
                  
        Using a spoon, scoop out the seeds of the courgette halves and discard.
          Step 3
                  
        Fill the courgette skins with the Violife and top with the cherry tomatoes and mushrooms.
          Step 4
                  
        Place on a lined baking tray and bake in the oven for 20 minutes or until soft.
          Step 5
                  
        Sprinkle over the basil and serve.
