Snowman Cookies

  • RECIPE MAKES: 10 cookies
  • PREP TIME: 45 minutes
  • COOK TIME: 10 minutes

Preheat the oven to 180°C/160°C fan/gas mark 4.

Place the Fate low protein all-purpose mix, baking powder, mixed spice and mixed peel into a mixing bowl and stir to combine.

Using your fingertips, rub in the butter until it resembles fine breadcrumbs.

Add the caster sugar and dark brown sugar and mix well.

Pour in the syrup and stir to form a soft dough (add a little water if needed)

Divide the dough into 10 equally sized balls and place on a lined baking tray, allowing room for the biscuits to spread during cooking.

Gently press the top of each ball to slightly flatten.

Bake for 10 minutes, or until golden.

Remove the cookies from the oven. They will still be soft, so leave on the baking tray until firm, then remove and leave to cool and crisp on a wire rack.

To decorate, sift the icing sugar into a bowl and gradually add the warm water until the icing becomes thick enough to coat the back of a spoon.

Use a black coloured icing pen to draw the snowman’s eyes and mouth onto a marshmallow. Use the orange coloured icing pen for their noses.

Drop a teaspoonful of the icing onto the centre of the cookie and use the back of a spoon to spread it out. Place the face marshmallow on the top of the cookie in the wet icing.

Add 3 Skittles for the snowman’s buttons down the centre of the cookie.

Leave the white icing to set. This will take at least 30 minutes.

  • 25g Caster sugar
  • 25g Soft dark brown sugar
  • 50g Golden syrup
  • 1 tbsp Cold water
  • To decorate:
  • 250g Icing sugar
  • 35ml Warm water
  • 30 Skittles
  • 10 Freedom confectionery vegantics mallows vanilla
  • Black coloured icing pen
  • Orange coloured icing pen
