Pre heat the oven 220°C/ 200°C fan/ Gas mark 6.
Place the sweet potatoes into a suitable saucepan and cover with cold water.
Bring to the boil and simmer for 2 minutes and then drain.
Meanwhile mix in a bowl the remaining dry ingredients.
Toss the sweet potatoes in the dry mix, making sure you coat them evenly.
Lay the sweet potatoes on a flat tray and using trigger spray, spray with a fine mist of water making sure you spray all sides of each potato.
Transfer into a roasting tin, and then coat the potatoes with the oil.
Roast for 25-30 minutes before serving.
Hint: Ensures that your roast potatoes are lovely and crispy, do not be tempted to skip!
