
Parsnip and Apple Cake

- PREP TIME: 20 minutes
- COOK TIME: 30 minutes
Preheat oven to 200°C/180°C fan/gas mark 6.
Place the butter, sugar, cinnamon, mixed spice, nutmeg and ginger in a bowl and cream together using an electric whisk.
Add the baking powder, Fate Low Protein All-Purpose Mix, parsnip and apple to the mixture and stir to combine.
In a separate bowl, combine ProZero, egg replacer and golden syrup.
Combine both mixtures to form a batter then pour into a lined cake tin and bake for 30 minutes until golden.
Remove from the oven and allow to cool, then turn out of the tin.
Fate low protein all-purpose mix and ProZero are foods for special medical purposes and must be used under medical supervision. This recipe has been specifically designed for a low protein diet.

- 100g Butter, soft
- 100g Brown sugar
- 1 tbsp Cinnamon
- ½ tsp Mixed spice
- ½ tsp Nutmeg
- ½ tsp Ginger, peeled and ground
- 60g Parsnip, peeled and grated
- 60g Apple, grated
- 2 tsp Baking powder
- 200g Fate Low Protein All-Purpose Mix
- 100ml ProZero
- 10g Egg replacer
- 2 tbsp Golden syrup
- You will need an 8-inch cake tin.
