Guacamole Toasted Sandwich

Step 1

Halve and remove the stone from the avocado. Into a bowl, scoop out the avocado and mash with a fork until soft.

Step 2

Mix in the diced onion, garlic, chilli, coriander, lemon juice, cumin, salt and pepper.

Step 3

Butter each slice of Mevalia Pane Casereccio, turn 2 slices over so the butter side is facing down.

Step 4

Divide the avocado mix between the two slices, before layering with the cherry tomatoes, cucumber slices and finely sliced onion.

Step 5

Place the remaining slices of Mevalia Pane Casereccio on top with the butter side facing upwards.   

Step 6

To cook, warm a large frying-pan over a low - medium heat, carefully place each sandwich in the pan and cook on each side for 4-5 minutes. Cut in half and serve.

Recipe tips; if using a George Foreman grill or similar, reduce the cooking time to 4-5 minutes in total.

  • 1 Ripe avocado
  • ¼ Small onion, finely diced
  • 1 Small garlic clove, crushed
  • ½ Green chilli, finely chopped
  • 1 tbsp Fresh coriander, finely chopped
  • 1 tsp Lemon juice
  • ¼ tsp Cumin
  • A bit of salt and pepper
  • 10 g Butter
  • 4 slices Mevalia Pane Casereccio
  • 10 Cherry tomatoes, halved
  • 8 Slices cucumber
  • ¼ Red onion, finely sliced
