Greek Avocado Deli Sandwich

  • RECIPE MAKES: 2 Sandwiches
  • PREP TIME: 10 minutes
Step 1

Cut the avocado in half, remove the stone and scoop out the flesh, place in a bowl add the lemon juice. Mash until soft. 

Step 2

Butter 4 slices of Mevalia Pane Casereccio then thinly spread the mayonnaise on two of the slices. 

Step 3

Top the two slices with the mashed avocado, layering with Sun-blushed tomatoes, olives and spring onions. 

Step 4

Season and place the 2 remaining slices on top, cut in half and serve.

  • Butter for spreading
  • 1 tsp Vegan mayonnaise
  • 16 Mini Sun-blushed tomatoes, halved
  • 6 Green olives, pitted and sliced
  • 2 Spring onions, sliced
  • Salt and Pepper to taste
