Method
step 1
Place a pan over a medium heat and add the oil. Add the pitta and toast lightly for 1 minute.

Put the toasted pitta into a large bowl and add the rest of the salad ingredients.

In a jug, mix the dressing ingredients together.

Pour the dressing over the salad and toss to coat.

Ingredients
- For the salad:
- 1 tbsp Oil
- 1 Low protein pitta bread, chopped
- 1 Romaine lettuce, chopped
- 1 Cucumber, deseeded and sliced
- 5 Radishes, chopped
- 1 Vine tomato, chopped
- ½ Green pepper, deseeded and chopped
- 2 Spring onions, chopped
- For the dressing:
- 3 tbsp Olive oil
- 2 tbsp Lemon juice
- 2 Garlic cloves, crushed
- 1 tsp Sumac powder
- 1 tsp Balsamic glaze
- ½ tsp Fresh mint, chopped
- Salt and pepper to taste
