Place a saucepan over a low heat and add the caster sugar and golden syrup and stir until the sugar has melted. Try not to let the mixture bubble until the sugar has dissolved.
Once melted, turn up the heat a little and simmer until you have an amber coloured caramel (this will not take long).
Quickly, turn off the heat, add the bicarbonate of soda and beat in with a wooden spoon until it has all disappeared and the mixture is foaming.
Scrape into the tin immediately – be careful, the mixture will be very hot!
Leave to cool for 30 minutes.
In the meantime, melt the Vitabite in a heatproof bowl over a pan of simmering water.
Remove the cooled honeycomb from the tin and break into roughly 14 pieces.
Dip the honeycomb pieces into the melted Vitabite until coated.
Place on a wire rack to allow the excess Vitabite to drip, then place in the fridge for 20 minutes or until set.
