Add the sugar and water to a pan and boil for 10 minutes or until the sugar has dissolved and a light syrup has formed.
Blitz the berries and the lemon juice in a blender, until smooth and pass through a sieve to remove seeds.
Add the syrup to the berry mixture in a jug and mix together.
Pour into the ice cream maker and freeze according to manufacturers instructions.
