Preheat oven to 200°C/fan 180°C/ gas mark 6.
Wash and scrub the sweet potato.
Place in oven and cook for 40 minutes or until soft.
Cut in half and scoop out the sweet potato flesh into a bowl.
Mash with butter, Violife and ProZero until soft.
