Petits Pizza Muffins

  • RECIPE MAKES: 24 Mini Muffins
  • PREP TIME: 35 MInutes
  • COOK TIME: 20 - 25 Minutes
Step 1

Preheat oven to 200°C/fan 180°C/gas mark 6.

Step 2

Place water, yeast and psyllium husk into a bowl, stir and leave to thicken for 10 minutes. Once thickened, add oil and stir through.

Step 3

Meanwhile, place Fate Low Protein All-Purpose Mix, 35g Violife, 50g onions, 50g peppers and 1 tsp herbs in bowl and mix together.

Step 4

Add psyllium husk mixture to bowl. Using your hands, mix until a dough has formed.

Step 5

Dust work surface with Fate Low Protein All-Purpose Mix and knead dough for 3-5 minutes. 

Step 6

Leave dough to rise for 20 minutes.

Step 7

Divide dough equally into the silicon tray holes.

Step 8

Cover each piece of dough equally with passata, then sprinkle with remaining Violife, peppers, onions and herbs.

Step 9

Bake for 20-25 minutes until golden brown.

For 1 exchange serve with 35g of tinned sweetcorn! 

  • 180ml Warm water
  • 3g Dried yeast
  • 4g Psyllium husk
  • 2 tsp Oil
  • 220g Fate Low Protein All-Purpose Mix, plus extra for dusting
  • 50g Violife For Pizza mozzarella flavour, grated
  • 100g Onion, finely chopped
  • 100g Peppers, green and red, de-seeded & finely chopped
  • 2 tsp Italian mixed herbs
  • 50g Passata
